Taco Cupcakes

Introduction

Taco Cupcakes are a playful, bite-sized version of your favorite taco night flavors. Using wonton wrappers or small tortillas as the “cupcake” base, they’re layered with seasoned meat, cheese, and your favorite toppings. They’re crispy, savory, and endlessly customizable — and they disappear fast!

Ingredients
    • 1 lb ground beef (or ground turkey)
    • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
    • 2/3 cup water
    • 1 cup shredded cheddar cheese (or Mexican blend)
    • 1 cup salsa (chunky works best)
    • 24 wonton wrappers (or small round-cut tortillas)
    • Cooking spray
    • Optional: 1/2 cup refried beans or black beans
    • Muffin tin (standard 12-cup size)
Optional Toppings
    • Sour cream
    • Diced tomatoes
    • Jalapeños
    • Shredded lettuce
    • Guacamole or avocado slices
    • Chopped cilantro
    • Sliced olives
    • Hot sauce
Instructions

1.Preheat oven to 375°F (190°C). Spray a 12-cup muffin tin with nonstick cooking spray.
